Day 3 of my restart.
So, I haven’t mentioned this because I was afraid I would once again fail but I have yet again tried to restart my healthy eating to lose weight and get fit and healthy. I’ll be honest I have been going between 210 and 215 since last September. I always had excuses of why I was eating bad and that I would just restart later but my restarts would never last more then like 4 days. I need to make a commitment, I’m seriously done carrying all this extra weight around.
This past Friday I did just that. I made a commitment to force myself, no matter what, to eat healthy for one full week. I feel like if I can get through the first week of all my cravings it will get easier as I go. Today is day 3 and so far so good. I just finished eating this amazing chicken salad I made and am still deciding what I’m going to have for dinner.
I need to do this this time around. 40 lbs gone its time to increase that number!

HG Mini Deep-Dish Spinach Pizzas

PER SERVING (1 mini pizza): 154 calories, 4g fat, 578mg sodium, 20g carbs, 1.5g fiber, 3g sugars, 8g protein — PointsPlus® value 4*
A slice of regular deep-dish can be a calorie disaster. But these diminutive ‘n decadent deep-dish pizzas are totally innocent and totally YUM!!!
Ingredients:
Two 10-oz. packages frozen chopped spinach, thawed and squeezed dry
1 1/2 cups shredded part-skim mozzarella cheese
1 tbsp. chopped garlic
1/2 tsp. salt
1 cup canned crushed tomatoes
1/4 tsp. Italian seasoning
1/4 tsp. garlic powder
1/4 tsp. onion power
1 package Pillsbury Classic Pizza Crust refrigerated dough
1/4 cup reduced-fat Parmesan-style grated topping
Directions:
Preheat oven to 375 degrees. Spray a 12-cup muffin pan with nonstick spray.
In a large bowl, thoroughly mix spinach, shredded cheese, chopped garlic, and salt. In a medium bowl, mix crushed tomatoes with seasonings.
Roll out dough into a large rectangle of even thickness, at least 12” X 9”. Evenly cut dough into 12 squares. Place each square in a muffin cup, and press it into the bottom and up along the sides.
Evenly distribute spinach-cheese mixture among the cups, about 3 tbsp. each, and firmly pack it in.
Evenly top with seasoned crushed tomatoes, about 1 tbsp. per cup, and sprinkle with Parm-style topping, 1 tsp. per cup.
Bake until dough is firm and golden brown and filling is hot, about 15 minutes. Enjoy!

HG Garlic Chicken Pizza

The garlic is GREAT, the tomato is tasty, and the whole thing is downright delicious!
Ingredients:
1 wedge The Laughing Cow Light Creamy Swiss cheese
2 tsp. reduced-fat Parmesan-style grated topping
1/4 tsp. chopped garlic
1/4 tsp. garlic powder
Dash black pepper
1 stick light string cheese
1 high-fiber pita
2 oz. cooked and shredded (or finely chopped) skinless chicken breast
2 tbsp. diced tomato
2 tbsp. chopped fresh basil
Optional topping: red pepper flakes
Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray.
In a small bowl, combine cheese wedge, 1 tsp. Parm-style topping, chopped garlic, 1/8 tsp. garlic powder, and black pepper. Stir until smooth.
Break string cheese into thirds and place in a blender or food processor — blend at high speed until shredded. (Or pull into shreds and roughly chop.)
Place pita on the baking sheet. Evenly spread with cheese-wedge mixture and sprinkle with shredded string cheese, leaving a 1/2-inch border. Top with chicken and sprinkle with remaining 1/8 tsp. garlic powder. Top with tomato, basil, and remaining 1 tsp. Parm-style topping.
Bake until hot and lightly browned, 10 - 12 minutes. Enjoy!
